Truffles On The Rocks challenged me to try clarification with yogurt. So I did! I made a Clarified Punch with Greek yogurt and I used it to make an (almost) all Greek Ingredients cocktail - the Metaxa Manhattan. Find the recipes below. Yogurt clarification is something I have never done before and now that I did I already have some new ideas for the future episodes. Of course, I wanted the ball to keep on rolling so I challenged my friend Jean-Felix back. I am sure he will have a great time working on my challenge.
Greek Yogurt Manhattan
● 60 ml (2 oz) Metaxa 12 stars
● 30 ml (1 oz) Greek Punch*
● 2 dashes Angostura Bitters
● maraschino cherry for garnish
*Greek Punch
● 120 ml (4 oz) Muscat Wine
● 30 ml (1 oz) Ouzo
● 30 ml (1 oz) honey syrup
● 45 ml (1.5 oz) mountain tea**
● 45 g Greek yogurt
** in 200 ml (6.75 oz) of boiling hot water add 3.5 g mountain (or shepherd's) tea and 0.1 g wormwood. Let it steep for 5 minutes and then strain. Mix everything (except yogurt), then pour the mixture into the yogurt while stirring it. Let it sit for 6 hours and then strain through a coffee filter.
